Paolo, a well experienced restaurateur and sales manager, started his management career in 1995 at Raffele Ruggieri’s Bice Group in New York, opening two restaurants for the group. The first in central Manhattan followed by the second in Long Island.

He then returned to London in 1997 to work for Michelin Starred Chef Stefano Cavallini at the Halkin Hotel followed by a four year spell as restaurant manager at the Pharmacy, owned by Matthew Freud and Damien Hirst.

In 2002 Paolo moved to Bermuda and joined the Fresco's Group as General Manager for a year and later after having been approached by an investor, opened the high profile Sapori restaurant on the island as a business partner, which he managed successfully for over 2 years.

Returning to London in 2007 he has worked for the well known restaurateur Michael Gottlieb as General Manager at Amici and then started his own company, introducing Italian wineries to the UK market.

Before choosing the hospitality route, Paolo had worked for various sourcing companies in Italy for over 3 years, developing business relationships and very successfully sourced upmarket Italian products for the Polish market.

Paolo is a strong believer in transparent, flexible and honest business dealings and loves the personal, hands-on contact with the client and suppliers, which has played an instrumental part to Unitas’ success to date.

David has devoted most of his life to the meat industry over the last 50 years and has been an instrumental part in developing and running successful meat supply operations.

As well as being a director at Unitas, he also acts as an independent adviser to Fenns of Piccadilly London.
